We are hosting a degustation of Mexican food classics, inspired by some of the most iconic and influential dishes from across the country. Showcasing a wide array of textures, colors, contrasts, and flavours. We have hand-picked these recipes to take the diner through a trip across our childhoods, food from the street markets, the family restaurants, grandmother’s pantry, and our own evolution as Mexican chefs. First Course
Tlayuda de Chapulines. Refried black beans, buffalo mozzarella, toasted grasshoppers, coriander, radish
Second Course
Quesadillas de Tianguis. Sauteéd pasilla mushrooms in deep-fried masa dumplings, salsa verde, sour cream, feta, Mexican pickles
Third Course
Pozole. Rich guajillo and pork broth with braised hominy, tostada, lime, salsa macha
Fourth Course
Duck Enmoladas. Roasted duck breast with black poblano mole, buttered chayote, camote crisps, toasted sesame
Fifth Course
Pan de Elote. Sweet corn cake, chilli chocolate ice cream, cajeta, popcorn garapiñado, burnt tortilla salt
